manual camera adjustments

video- panning, camera is sideways and the tripod was on wheels
video- tilt, camera is still sideways
video- hand-held, pan and tilt, still sideways
photo- shutter speed 1/40, f-stop 5, ISO 200
photo- shutter speed 1/13, f stop 4.5, ISO 100

    I really don't understand what I am looking at with the motion shots. Why would you frame the image on it's side? Good notes on the stills but they are both out of focus. Focus is not optional.
